Longjing or "dragon's well" is a variety of green tea that has been cultivated for a hundred and ten years on highland plantations in the valley of Lake Xihu near Hangzhou (Zhejiang Province), in the vicinity of which the village that gave its name to the variety is located. Although nowadays Dragon's Well is cultivated not only in its homeland, but also in other provinces of China with the most suitable climatic conditions. It is harvested only by hand, as only the top two leaves are used for tea production. The first harvest of tea for making lunjing is picked in spring, before the Qingming Festival (early April), and this harvest is considered to be the most expensive and of the highest quality. Spring leaf tea has a particularly fine aroma and exquisite flavor. The leaves from the summer and fall harvests are less valued and are used to produce a simpler category of tea. In general, the harvest lasts until October. This variety of tea has been awarded the honorary title of "China's Famous Tea".
The process of creation
First, the harvested leaves are wilted. Then they are roasted in three stages in special cauldrons, each leaf being pressed against the walls of the pot by hand. It should be brewed not with boiling water, but with hot water 70 - 80 degrees. Tea will be ready in 10-30 seconds.
