Dun Ding is one of the most renowned oolong tea varieties, originally from Taiwan. However, Vietnamese tea masters have adopted traditional production methods and successfully cultivate this tea in the Bao Loc region of Lam Dong province. The high-altitude climate and misty mornings create ideal conditions for developing the rich flavor profile of this oolong.
The production of Dun Ding begins with the careful selection of young tea leaves, which are first withered under the sun and then undergo a traditional rolling process in bamboo baskets. This step ensures even oxidation, giving the tea its characteristic full-bodied taste. Once the desired level of fermentation is reached, the leaves are dried at low temperatures to preserve their aromatic properties.
Dun Ding's infusion has a deep amber-green hue, a delicate floral and creamy aroma, and a multi-layered taste with honey and nutty notes. This tea has a long, smooth aftertaste and unfolds beautifully over multiple infusions, delighting connoisseurs with its complexity and depth.
